Recipe: Spicy Basil Chicken -- my favourite Thai food!

Spicy Basil Chicken -- my favourite Thai food!

11 cloves of diced garlic
1 onion sliced Julien
400 grams of chicken (breasts are the easiest to work with but legs have more flavour!)
25 small chillies chopped (don't throw out the seeds if you like it spicy!)
lime leaves
fish sauce
1 and 1/4 cup fresh basil (plucked from stem but not chopped)

Let some oil warm in a frying pan or wok until hot. Add onion and let cook for 1 to 2 minutes then add the chicken (or some other meat) with the garlic.
Add the spicy peppers (or chillies). Cook until meat is done. Then add the rest of the ingredients and stir fry for an additional minute or 2.

Serves 4 with rice.
